Chicken necks — the section between head and body, fine vertebrae wrapped in small muscles and skin. The neck works hard in life, so its meat is more flavourful and pleasantly chewy when slow-cooked. A favourite for soy-braised necks (Chinese style), ginger neck soup (Vietnamese), and stock-boosting. Cheaper than thigh but flavour-comparable. Pro tip: par-boil for 5 minutes and discard the water before cooking for a cleaner broth. A kilo is 10–12 pieces.
