Pure chicken fat — soft yellow fat pad trimmed from the abdomen and rear, skin-free. Mostly monounsaturated — milder than coconut oil and richer than vegetable oil. Method: slow-render in a heavy pot for 45 minutes to produce clear golden schmaltz. This is the secret ingredient in Hainanese chicken rice, chicken noodle soup, and Chinese-restaurant vegetable stir-fries. Refrigerator-stable for three months. A kilo of fat yields roughly 700 ml of rendered chicken oil.
